Do they improvise in sitcoms?

Sometimes I'm watching the bloopers to a sitcom and one conversation can completely change from one take to the next, like the same shot but different words all together, and I wonder if they' just have a basic layout of what they are to say? Being an actor I'm interested by all of that stuff. Can I have some info about how sitcoms run ect because I'm fascinated :)
